Dessert Nicoleta cake

Top: I mixed the egg whites with a pinch of salt until I got a hard foam, I added the sugar and I continued to mix until I got a firm meringue. I mixed the yolks with the oil and milk, then I added flour, cocoa and baking powder, all sifted. At the end I incorporated the egg whites with slow movements from bottom to top. I lined the tray with baking paper and poured the top into the pan, put the pan in the preheated oven at 180 degrees, set the function for baking the cakes and left it for 26 minutes, then I took the tray out of the oven and let the top cool. After the countertop cooled, I started using creams.

Cream 1: In a stainless steel bowl I broke the chocolate pieces, I added liquid cream and I put it on the steam bath to melt. I hydrated the gelatin sheets in cold water. After the chocolate melted, I melted it well, took the bowl off the heat and let it cool for 2-3 minutes, then I incorporated the gelatin sheets squeezed well by the water. I mixed for about 5 minutes, then I poured the whole mixture over the condensed milk and I mixed for another 10 minutes. I put the bowl in the fridge for 20 minutes. While the bowl of cream was in the fridge, I beat well 200 ml of whipped cream. I took the bowl out of the fridge and started mixing until I got a thick cream, a cream that I mixed with whipped cream.

Assembly first part: I covered the tray in which I baked the top with food foil, I placed the cooled top and then I spread it over the cream 1. I mixed the ecappuccino sachets with the ness and diluted with water, then I soaked the biscuits and I placed it over cream 1, after which I started to make cream 2.

Cream 2: I put the yolks with the milk and sugar on the steam bath, I stirred continuously until they started to thicken. I hydrated the gelatin sheets with cold water, then I squeezed them well and put them in the yolk cream after letting it cool for 3-4 minutes. Separately I beat 200 ml whipped cream. After the yolk cream has tempered, I mixed it with the mascarpone, don't be afraid if the mixture is more liquid because it is still warm and so hot we incorporate it in the whipped cream. After we have homogenized everything, we spread cream 2 over the biscuits, we level it nicely and we decorate it with colored confetti and chocolate chips, we put the tray in the fridge until the next day. The next day we portion with a wide-bladed knife passed through hot water. Happy Birthday !
