This cheesy broccoli pasta bake doesn't require you to make a sauce first - you simply add a beaten egg and milk to cooked pasta and broccoli and bake! Tastes even better the next day.

  • 1 large head of broccoli, about 600g
  • 300g penne pasta
  • 2 tablespoons extra virgin olive oil
  • 1 clove of garlic, peeled but left whole
  • 250g hard mozzarella or Scamorza cheese, cubed
  • 100g grated Parmesan cheese, plus extra for topping
  • 1 egg
  • 3 tablespoons milk
  • 30g breadcrumbs

  1. Bring 2 large pots of salted water to the boil.
  2. Meanwhile, divide the broccoli into small florets and remove the outer part of the stem. Slice the stem into smaller pieces.
  3. Add the prepared broccoli to the first pot and the pasta to the second. Drain the broccoli after 5 minutes and the pasta after 3/4 of the cooking time. For example, if the directions on the box suggest 10 minutes, drain it after about 7 minutes.
  4. Preheat oven to 180 C / Gas 4.
  5. Heat oil and garlic clove in a large frying pan over medium heat until it starts to sizzle. Add drained broccoli and stir to coat in the oil. Add drained pasta; mix well and remove garlic clove. Add cubes of cheese and grated Parmesan; toss to mix. Transfer pasta and broccoli mixture into a baking dish.
  6. Break the egg into a bowl with milk; beat well with a fork until combined. Pour over pasta and stir to mix in. Sprinkle breadcrumbs and additional grated Parmesan on top.
  7. Bake in preheated oven for 20 minutes or until crispy and golden. Remove from the oven, leave to rest covered with foil for 10 minutes before serving.

    Pasta with Italian sausage and broccoli

    This dish is kind of a poster child for culinary flexibility. I’ve made it with broccoli, broccoli rabe and even Chinese broccoli. It’s great with kale. You can use Italian sausage or salt pork, guanciale or prosciutto. You can go meatless with olives and capers (though this is even better with a few salted anchovies thrown in).

    Be careful cooking the garlic. Don’t let it scorch. If you see it beginning to go from golden to brown, immediately pull the pan from the heat and add a spoonful of the pasta water to stop the cooking.

    Bring a large pot of liberally salted water to a boil. While the water is heating, clean the broccoli: Separate the florets from the stems and set them aside. Remove the tough peel of the stems with a paring knife or vegetable peeler, then cut the stems into half-inch cubes. Remove the casings from the sausage.

    Warm the olive oil in a large skillet over medium-low heat and crumble the sausage meat into the oil, flattening each piece slightly so it will brown better. Cook until the sausage browns and crisps. Add the garlic and red pepper flakes and cook until the garlic turns pale brown, about 5 minutes. Do not let the garlic scorch if it begins to brown, remove the pan from the heat.

    Add the pasta and the diced broccoli stems to the boiling water and cook 6 to 7 minutes. Add the broccoli florets and cook until the pasta is tender, about 10 minutes total. Scoop out the pasta and broccoli and drain keep the water at a boil.

    Place the skillet over high heat and add the drained broccoli and pasta to the sausage and garlic. Add one-half cup boiling water from the pasta pot. Cook, stirring frequently, until the water mostly boils away, about 1 1/2 to 2 minutes. Season to taste with salt and a good grinding of black pepper.

    Divide the pasta evenly among 6 warmed pasta plates and shave pecorino Romano over the top with a vegetable peeler.

    It has been a while that I made a pasta bake recipe. I love any kind of cheesy pasta bake but am forced to avoid it as much as I could because of the overload of cheese! Can you believe it? I mean I agree the cheesy baked pasta is not a diet-friendly dish, but one can indulge in such luxurious delicacy once in a while, right?

    So, when I made up my mind to make this easy cheesy veggie pasta bake dish, I was determined to make it happen whatever may come my way! Sometimes we have to fight for our rights, don’t we? LOL!

    And the fight was all worth it simply because of the amazing taste of this cheesy baked pasta! You will simply be hooked to this veggie pasta bake dish loaded with broccoli as soon as you take the very first bite, trust me on this!

    This cheesy pasta bake is a fairly simple recipe but it has lot of potential to be customized in various ways. I made my version of veggie pasta bake using only broccoli because I wanted to have the earthy flavor of broccoli come through the soft cheesy goodness.

    Mushrooms, assorted bell peppers, olives, sweet corn and many other veggies can add extra edge to this cheesy pasta bake! You can add any veggies of your choice – add some thinly sliced mushrooms after sautéing them in olive oil until golden brown, or add some garlic sautéed assorted bell peppers to give a colorful kick.

    Just make sure to bring the cheese to room temperature before you add it to the sauce and then start baking. This will ensure that the cheese melts well. And remove the baking dish from the oven immediately when the top starts to get a golden brown color even a short delay can ruin the whole dish!

    ONE-POT BACON BROCCOLI PASTA

    I’ve found there are two types of people in this world. Those who like their bacon so well done it’s on the border of being burnt and those who like it walked through a warm room.

    I remember the first time I made breakfast for my in-laws I burnt the bacon and I was horrified. They, on the other hand, were fighting over the burnt pieces.

    I definitely don’t like my bacon burnt but I do appreciate it cooked all the way through.

    My problem with most pastas with bacon is that they let the bacon cook in the sauce. While that does give that bacon flavor all throughout it basically is boiled bacon which…ew…yuck.

    The key to making this One-Pot Bacon Broccoli Pasta successfully is that we cook the bacon, drain it, then cook the rest of the dish in the same pan. So we get a little of that bacon flavor without soggy bacon.

    I came up with this pasta for my family. I made it a thousand different ways until we decided this was the best version. One-pot meals will always have my heart.

    Sure. You can use any small shaped pasta such as penne or farfalle pasta.

    Think of this recipe as my Italian version of mac and cheese. This creamy Parmesan baked pasta starts off with a rich bechamel sauce, then a heavy helping of both freshly grated Provolone and Parmesan, making it perfectly decadent and cheesy. I like to use shell pasta because the curves hold on to more of the cheese and the sauce, and broccoli florets add a little bit of greens in an otherwise indulgent dish. My favorite part, however, is the parmesan and panko breadcrumb mixture- it creates that perfect golden brown crunch on top that I love so much!

    This is a wonderful dish to make for entertaining, because it can be entirely assembled ahead of time. Once you fold in the pasta, just set it in the fridge covered for up to two days. When it’s time to serve it up, sprinkle it with the panko topping, and set it in the oven until it’s bubbly perfection! I recommend to take it out of the fridge about an hour before it’s time to heat it up – when it reaches room temperature, it will cook more evenly in the oven.
