RECIPE PREPARATION Light spring soup:
Fry the onion in olive oil for 2 minutes. Add the garlic and oregano and leave for a maximum of 1 minute. Add the carrots and zucchini. Cook for 5-6 minutes. Add the tomato, peas and 1.5 liters of water. Bring the soup to the boil, reduce the heat to low and simmer for 20 minutes.

Leurda, like any leaf, must be washed well in running water.

Spring fettuccine with basil
a bunch of fresh basil
680 ml chicken soup
100 ml of olive oil
2 cloves of garlic
450 g fettuccine paste
2 tablespoons olive oil
a leek stalk, finely chopped
a bunch of finely chopped green onions
2 jalapeno peppers, peel the seeds and cut into cubes
2 salt knife tips
2 zucchini, cut into cubes
200 g peas
a bunch of asparagus, diced
100 g grated Parmesan cheese (you can put even more to taste)
Method of preparation:
Mix in the blender the basil leaves, a third of the chicken broth, 100 ml of olive oil and garlic until smooth.
Add the fettuccine to the boiling water and simmer for eight minutes until al dente and then drain the pasta.
Heat two tablespoons of olive oil in a pan over medium heat. Saute the leeks and green onions in hot oil for about 5 minutes, until soft, add the jalapeno peppers and salt and leave on the fire for about 5 minutes.
Add the rest of the chicken, zucchini and pea soup to the pan, bring to the boil and simmer for 5 minutes. Add the asparagus and keep the ingredients on the fire for another 3 minutes, until the asparagus softens.
Pour a quarter of the basil and garlic mixture into the pan and boil the ingredients for about a minute, then remove the pan from the heat.
Put the pasta in a larger bowl, pour the vegetables over the pasta, then the remaining mixture of basil and garlic. Sprinkle with Parmesan cheese, then gently mix the fettuccine pasta with the ingredients.
